Angel's Share
A portion (share) of a wine or distilled spirit's volume that is lost to evaporation during aging in oak barrels. This depleted spirit was said to be taken by the angels in exchange for watching over a distillery or aging house.

.75 oz. lemon
.25 oz. simple
1 oz. grapefruit
.25 oz. green Chartreuse
1.5 oz. Plymouth
tools: shaker, strainer, channel knife
glass: cocktail
garnish: grapefruit twist
Combine all ingredients and shake. Strain into a chilled cocktail glass. Cut a grapefruit twist over the drink to express oils. Curl the twist and garnish.
